The Hickories is a local organic farm in Ridgefield, CT that has been in the Brewster Family for 76 years. The farm provides vegetables, fruits, flowers, wool, meat, and other farm products for the community and surrounding area through their CSA and Farmstand as well as local markets and restaurants. The farm’s fruits and vegetables are certified organic under the Bay State Organic/ USDA National Organic Program, meaning they are free of synthetic pesticides and synthetic fertilizer. Our chickens, pigs, and sheep are free-range and are raised on the farm’s organic pastures.

November 4th: Farm Dinner hosted by Wood, Fire, Food

Locavores enjoy an evening of Hickories fall harvest vegetables and our own delicious lamb and other alternative proteins prepared by Dan Sabia from “Wood Fire Food”. A short farm walk followed by a hearty meal that should inspire one to think more broadly about interesting protein options in our foodshed.

Dan’s mission is to bring people back to the center, back to the basics, and to evoke all the joys of good food, fellowship, and craftsmanship.

Farm to Table Celebration featuring:

  • Pastured lamb
  • Assorted autumn harvest of vegetables
  • Chestnuts and hickory nuts (if we can crack enough of them!)
  • Dan’s famous open-fire cooking

Dan Sabia is recognized by many to be among the best up and coming chefs in Fairfield County.  He was trained at Bedford Post with Jeremy McMillan, recently at Jesup Hall with Bill Taibe, and is now setting out on his own to explore his own dreams and vision for the future of food in our region.

Q What is a CSA?

CSA stands for Community Supported Agriculture, which is a model of local agriculture where shareholders (families or individuals) pledge to support our local farm. For the duration of the seasonal share (spring, summer or fall), CSA members come to The Hickories farm once a week to pick up their share of the harvest. You'll get a variety of whatever is being grown and freshly-picked, since the food and flowers change with the seasons. In return for your CSA pledge and farm support, members: (1) are the first to receive notifications about and access to farm programs, tours, special events and workshops; (2) receive free admission or reduced pricing at the aforementioned; (3) have reserved access to the farm on pick-your-own crop days which includes strawberries, blueberries, cherry tomatoes, peas and more; and (4) get connected to the rest of the Hickories community and it's farmers.
